Tonic Water Recipe for Sodastream

As a gift I received the ingredients and recipe for tonic water for my Sodastream. (or direct SodaStream)
-Cinchona Bark (3/4c )
-Citric Acid (1/4c)
-allspice (about 10 berries)
 -sprinkle of salt
-water (1qt)
-agave syrup (1c)
-dried lemon grass (one packet)
-limes (3)
-lemon
-orange

Zest and juice all of the fruit then mix all of the above ingredients (except agave) in a pot and boil then simmer for 30min.
  After boiling strain with a larger strainer then after a coffee filter.
After filtering add one cup of agave syrup and heat to dissolve. Once cool mix 1:3 with gin and add ice, lime wedge and sodawater. The tonic is not very sweet so additional agave syrup to taste

Modify a sodastream to make use 20oz bottles and to carbonate milk

WARNING: DO NOT DO THIS. IT DID NOT WORK AND WAS SOMEWHAT DANGEROUS. IT ALSO VOIDS WARRANTEES, MAKES BABIES CRYS AND OTHER BAD THINGS. For actual useful posts about sodastream please check out my sodastream recipes. I know we all want to carbonate whiskey, milk, coffee, wine, fruit juice and all other sorts of crazy things with the sodastream. I am also interested in carbonating smaller volumes like 2, 12, 16 and 20oz bottles. However we are sternly warned not to do this. This post documents my(so far failed) attempt to find a work around.
1)I cut 5/16" Outer Diameter (OD) vinyl tubing to about two feet in length
2)I drilled a 1/4" hole in the top of a small soda bottle
3)I pushed the tubing through the slightly smaller hole to get a tight seal.
4)I slid the tube around the soda stream
5)after filling the bottle with water and screwing on the cap I pumped two times causing the tube to detach from the sodastream the bottle to tip over and somehow dump about 1/2 of its contents without having its cap come off.

DIY Orangina recipe for Sodastream or soda water

Orangina is simply made of a mix of concentrated citrus juicee, high fructose corn syrup(HFCS) and soda water. I have not been using HFCS in any of my homemade sodas, Though I may eventually. In any case this recipe uses white sugar.

 When I was a kid i would try to make this by simply adding orange juice to soda water but this does not get you enough orange/sugar per volume as all the water in the orange juice is not carbonated. The trick to this recipe is you are taking the water out of the orange juice and making a concentrated syrup to add to soda water... Lets go.

 Here is what you need:
-white sugar
-a variety of citrus fruits, in this case two types of oranges, 1/2 grape fruit and a lemon
-a way to juice oranges...you know like a juicer please don't buy a fancy one. You don't even really need an electric one unless you are gonna do a lot of oranges.
-soda water or Sodastream, or direct SodaStream

1) Juice them fruits. Leave in some pulp.
 2) Pour the juice along with 3/4c white sugar into a nonstick pan and heat on low. Watch out it will foam up. you will need to keep an eye on it. Over time it will thicken up.
3) Heat till its thick. Once it is nice and thick. about the thickness of ____ . Take it off the stove and transfer to the freezer. It should not freeze! if it does you did not get enough water out and need to heat it again.
4) now add 2 TBSP to the bottom of a small glass and pour soda water on top.
5) drink up.

FAQ: 
When I mix soda water with my syrup it bubbles over WTF?
-Avoid this by making sure both the water and syrup are cold and always add the syrup first and soda second.

Homemade ginger ale recipe. Syrup method for SodaStream.

Ingredients for ginger ale syrup:
1 quart water (can be made with SodaStream)
ginger root
1 lime
1 lemon
1c white sugar
1.5c brown sugar
0.5 cup honey

You will also need to buy soda water or make your own soda water.

Zest the lemon and lime. I did this with my new hand held citrus zester
Juice the lemon and lime.
Peel and then grate the ginger.
Mix the juice and zest with the rest of the ingredients in a sauce pain and simmer for 30 min.
Allow to cool.
Strain with a tea filter.

Finally mix the syrup 1:5 or to taste with soda water.


Take it one step further and make your own soda water. Or carbonate with fermentation. My previous recipe for self carbonated spicy ginger ale . More recipes for soda in this great book Homemade Soda: 200 Recipes for Making ....
